A pool of melted butter around the pastry is the most visible fault in laminated enriched dough and the least ambiguous. It means the butter layer broke down before the dough could set its structure. The layers do not rise, they fuse, and instead of an open spiral you get a dense bun.
The mechanics of lift are these: layers of dough are separated by thin films of butter; on heating, water in the dough turns to steam, the steam cannot pass through fat, and it pushes the layers apart. Once the butter has melted and soaked into the dough there is no separation, the steam has nowhere to go — and it simply escapes.
Temperature during lamination
The governing rule: the dough and the butter block must have similar plasticity. Butter harder than the dough shatters into pieces and tears the layers; butter softer than the dough is pressed into it and stops being a film.
The working range for enriched lamination is 12–16 °C for both components. That is noticeably warmer than most people assume: at 4 °C, straight from the fridge, butter is brittle and crumbles inside the block on the first pass.
You can see mismatched plasticity in the cross section after the first fold: separate pieces of butter instead of an even film means the temperature was too low. A section that looks homogeneous, with no clear boundary between layers, means it was too high.
The number of folds
Three single folds, or two singles plus one double, are enough for yeasted lamination. That gives 27 to 32 butter layers — the optimum, where each layer is still thick enough to survive proving.
More folds is not better. Past roughly forty layers the butter films become so thin that they tear during the final roll and merge into the dough. The pastry loses its layering even though you folded it for longer.
Between folds the dough rests in the cold for 30 to 40 minutes, without exception. Skipping the rest is the second most common cause of torn layers: tightened gluten contracts unevenly during rolling and punches through the butter block.
The final roll
Finished thickness for escargot is 3–4 mm. Thinner and the layers are damaged; thicker and the centre of the spiral does not bake through and stays raw.
Direction matters: roll lengthways, turning the block from time to time, but never crush the edges. Flattened edges glue the layers together round the perimeter, and layering disappears along the rim — the characteristic fault where the centre of the spiral is open and the outer turn is dense.
The knife or cutter must be sharp. A blunt blade crushes the cut end and seals the layers — which is exactly why one pastry in a batch opens up and the one beside it does not.
Proving
This is where the butter disaster usually happens. Proving runs at 24–26 °C, and under no circumstances above 28 °C, because butter starts to melt at around 30 °C.
A warm proving cabinet, or a radiator next to the bench, guarantees that pool on the tray: the butter runs out before the oven, and the pastry sinks.
Time is 90 to 150 minutes, until roughly doubled. Readiness is judged by eye rather than by the clock: the layers on the cut end should have separated and become visible, and the piece should return to shape slowly under a light press.
Humidity during proving is 75–80 %. In dry air the surface skins over, and during baking that skin holds back the lift: the pastry tears at the side instead of opening.
Oven temperature
Enriched lamination goes in hot: 200–210 °C for the first 10 to 12 minutes, then down to 180 °C. The point is to generate steam quickly and drive the layers apart while the butter still holds its shape.
Put it in at 170 °C and the butter melts before enough steam pressure builds — and it leaks again. This is the most galling mistake, because everything before it was done right.
The other extreme is 230 °C and above: the surface and the sugar in the dough darken within minutes while the middle of the spiral stays raw.
